TSDA Cookbook: Bomb Bars

We all like to snack and grab a little something to munch on in the middle of the day. Instead of going for the chips or cookies, give your body the nourishment it needs from a Bomb Bar. It’s a solid source of protein, carbohydrates, and fiber so you can bounce back and score in the second half of your day. These are also ideal to have before or after a workout since they have such a great stimulating balance of nutrients. The combination of nuts, dates, oats, chia seeds, and chocolate is absolutely divine and I guarantee a sensation of sunshine from just one bite!

What you need:

  • 1 cup dates, pitted
  • 1 ½ cup old fashioned oats
  • ½ cup nut butter (any)
  • ¼ dark chocolate chunks
  • ¼ cup honey
  • ¼ cup chia seeds
  • ¾ nuts (any), chopped
  • ¼ dried cranberries or raisins
  • 1 tsp cinnamon

What to do:

  1. In a blender/food processor grind dates into little bits, and then transport into a medium-sized bowl.
  2. Stir together all ingredients until combined completely.
  3. Line an 8×8 baking dish with parchment paper. Scoop the whole mixture in the dish, lightly pressing down making all areas even.
  4. Allow to cool and bind in the refrigerator for at least 2 hours.
  5. Make cuts for 8 bars and wrap in plastic wrap if storing for later.
